At the Talbot Forest Cheese Company in Geraldine, cheesemaker Paul Fitzsimons gives a tour of the factory and shows how locally-sourced milk is transformed into artisan cheeses. In an interview, Dr Andrew West from AgResearch shows off the innovative wool research that helped craft his brand-new suit.
